Sometimes I create little morning invitations for my 5 year old son. Toy animals that are frozen in a block of ice and need to be rescued. Or grapes and toothpicks to build a structure. Or simply paints, water and a large piece of paper. They are just invitations. No pressure if he is not in the mood for them. He usually loves them though.

He especially liked this invitation I gave him a few days ago. A simple recipe for Easy Banana Pancakes and all the ingredients prepared for him.

A hand drawn baby pancake recipe for my son

We have cooked them together many times before. I knew he was ready to try the recipe on his own, apart from the cooking part (of course never leave your child unattended beside the stove).

For this morning invitation we needed 6 eggs and 3 ripe or overripe bananas. A bit of cinnamon and a pinch of sea salt make these simple pancakes extra delicious. And that’s all there really is to the recipe.

When Ronan found my hand drawn recipe and all the ingredients on the table he excitedly went to work.

He enjoyed cracking the eggs, mashing the bananas with a fork and mixing everything together by himself. Then he brought over his little chair to the stove, added a little coconut oil to a frying pan, and helped me to pour four dollops of batter into the pan using a tablespoon.

He has a small pan in his play kitchen which we used next to the big pan. We were able to cook two tiny pancakes at a time in it.

Once they were cooked from one side, after 2-3 minutes, we turned them over and cooked them briefly on the other side. Ronan took the first batch and started eating while I finished cooking the rest of the pancakes.

My pancakes in the big pan got a little bit burned in the picture above. That’s what happens if you take pictures instead of watching the stove. It’s best to cook them in a nonstick pan over a medium heat until they are golden brown.

These three-ingredient pancakes are so easy to make. Our kids love them for a quick breakfast or as a nutritious snack during the day.

They don’t really need maple syrup but I’ve always wanted to take a picture of maple syrup pouring over a stack of pancakes. Haha.

They taste great with fresh fruit too. An easy recipe with simple ingredients.

Variations to Try

If you and your child feel adventurous you can experiment with variations of the simple recipe and add some new foods to the mix:

  • Add Some Oats: Incorporate a tablespoon of rolled oats or oat flour into the batter for added texture and fiber.
  • Berry Burst: Gently fold in a handful of fresh blueberries or raspberries into the mixture before cooking. The berries add a juicy sweetness that complements the banana flavour. You could also add a few chocolate chips.
  • Nutty Delight: Sprinkle some finely chopped nuts, like walnuts or almonds, into the batter for a delightful crunch.

Serving Suggestions

Presentation can make mealtime more enjoyable. Here are some fun serving ideas and easy ways to make the banana baby pancakes even more nutritious:

  • Fruit Faces: Arrange slices of strawberries, kiwi, and blueberries on the pancakes to create funny faces.
  • Yogurt Drizzle: Top the pancakes with a dollop of Greek yogurt and a drizzle of honey for a protein-packed breakfast.
  • Nut Butter Spread: Spread a thin layer of almond butter or peanut butter on each pancake and top with banana slices for a hearty treat.

Leftover pancakes can be stored in an airtight container.
