A few years ago, after going through breast cancer, I began prioritizing self-care and shifting toward a mostly plant-based, whole-food diet. While I still enjoy high-quality meat occasionally and love using our chickens’ eggs, I’m passionate about learning and sharing plant-based eating. These recipes are packed with fresh fruits and vegetables, legumes, nuts, seeds and whole grains, and don’t need to take long to make. While I like eating healthy food, I don’t enjoy spending hours in the kitchen, so my recipes are usually quick, simple but super nutritious.
