This Avocado and Lime Toast is such a quick but delicious recipe for breakfast or lunch.
It’s not really a recipe because it’s so easy but I want to write it down anyway, so I won’t forget.
I always like to find new ideas for plant based spreads like hummus or different types of bean dips or beetroot spread (you can find many of these recipes in my course 7 Days of Eating Plant Based).
Avocado is especially easy as a spread on toast because you just need to cut a ripe avocado in half and scrape out the flesh to use as your spread. It’s delicious topped with cherry tomatoes or even just salt and pepper.
Or like in this version with the juice of half a lime.
There’s something about the taste of avocado and lime that is divine.
Avocado and Lime Toast Recipe
For 2 people you will need:
- 4 slices of wholemeal bread
- a ripe avocado
- a lime
- cayenne or chili powder (optional)
- salt and pepper to taste
Cut your avocado in half, scrape out the flesh and spread it onto your toast (a quarter on each slice of toast).
Squeeze a bit of lime juice over the mashed avocado.
Sprinkle with salt, pepper and cayenne pepper if using.
Enjoy.
