It’s quick to make, packed with healthy ingredients, and perfect for big batch cooking so you can enjoy it for multiple meals.

I love growing kale because it’s one of the easiest vegetables to cultivate outdoors. It’s also extremely healthy, making it a brilliant addition to any winter meal.

I don’t always like stepping outside when it’s freezing, but it’s rewarding to cut a few fresh leaves and bring them into the kitchen. - Dice the onion and mince the garlic. Peel and chop the potatoes into small cubes. Wash and chop the kale, removing the thick stems.
- Sauté Aromatics
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened and fragrant (about 3-5 minutes).
- Add the Vegetables and Beans
- Stir in the potatoes, beans, and broth. Bring the mixture to a boil, then reduce to a simmer.

Ingredients
- 2 tablespoons olive oil
- 1 - 2 onions, diced
- 4 cloves garlic, minced
- 3 medium carrots, diced (optional, for extra sweetness)
- 2 celery stalks, diced (optional, for added depth)
- 3 - 4 medium potatoes, peeled and cut into bite-sized cubes
- 4 cups vegetable or chicken broth
- 1 (15-ounce) can white beans (cannellini, butter or navy beans), drained and rinsed
- 4 cups chopped kale, stems removed
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
- ¼ teaspoon red pepper flakes (optional, for a little heat)
Instructions
- Dice the onion and mince the garlic. Peel and chop the potatoes into small cubes. If using, dice the carrots and celery. Remove thick stems from the kale and roughly chop the leaves.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the carrots, celery (if using), and potatoes to the pot. Stir well to coat with the aromatics. Pour in the broth and bring to a gentle boil. Reduce the heat to a simmer and cook for about 15 minutes, or until the potatoes are fork-tender.
- Add the drained white beans and chopped kale. Stir well to combine. Cover and let simmer for another 5–7 minutes, until the kale is wilted and tender.
- Add salt, black pepper, and red pepper flakes (if using). Taste and adjust seasonings as needed.
- Ladle the stew into bowls and serve warm. Enjoy on its own or with crusty bread for dipping.
